I made a turkey meatloaf and instead of trying to make it as similar-tasting to a beef meatloaf, I seasoned it with Penzeys poultry seasoning, along with air dried shallots and powdered rosemary (also Penzeys), celery salt, fresh ground pepper, and lime ponzu (not Penzeys). Also added unseasoned breadcrumbs, a beaten egg, and some dried mushrooms. The only change I'd make if I fix this again would be adding a dash of cayenne.
