
Shakshuka has been a go-to quick and easy dish for me for a while, in a stripped-down version using canned tomatoes. Cheap, simple, and tasty. But I went to the farmers market today because I had my food stamps and they do double dollars, and one of the vendors had some nice tomatoes, and another had some lovely garlic, and the folks with the duck eggs were there...
So, I made fancy shakshuka! And it was so good. I even got the duck eggs cooked perfectly, with the yolks not-quite solid and super rich and creamy.
